Amish Baked Oatmeal

Ingredients
- 2 large eggs
- 3/4 cup brown sugar
- 1.5 tsp baking powder
- 1.5 tsp vanilla
- 1 tsp ground nutmeg or ground cinnamon (can also do 0.5 tsp of each, or any combination that the cook likes)
- 1/4 tsp ground cloves (optional)
- 1/4 tsp salt
- 1/3 cup (5 tbsp) unsalted butter, melted
- 1 cup plus 2 tbsp milk
- 3 cups oatmeal (regular or quick)
Directions:
- Melt butter and set aside.
- Spray a 8x8 inch baking dish or 1.5-quart casserole dish with non-stick spray. Add eggs to dish and beat well.
Add brown sugar, baking powder, vanilla, nutmeg, cinnamon, cloves and salt to dish. Mix well until no lumps
remain.
- Whisk melted butter and milk into mixture, then add oats. Stir well, seal dish with cling wrap, and refrigerate
overnight.
- Bake uncovered at 350°F (use an oven thermometer to verify oven setting, if available) for 35-45 minutes or
until set in the middle. Serve hot with warm milk poured over the oatmeal.
Notes:
- Recipe doubles very nicely without needing to change the baking time; if you do this, use a 9x13 inch baking
dish or 3-quart casserole dish. When doubled this recipe easily feeds a very large group (10-12 hungry eaters) or
ensures a week's worth of breakfasts.
