Angie's Baked Cheddar Chicken with Sauce

Ingredients
- 4 large boneless, skinless chicken breasts
- 1 sleeve butter crackers (e.g., Ritz®)
- 0.25 tsp salt
- 0.5 tsp freshly-ground black pepper
- 0.5 cups milk
- 3 cups grated cheddar cheese
- 1 tsp dried parsley flakes
- 1 14-oz can condensed cream of chicken soup
- 2 tbsp butter
- 2 tbsp sour cream
Directions:
- Preheat oven to 400°F. While oven is preheating, lightly coat a 9x13 baking dish with non-stick spray
- In a one-gallon bag smash butter crackers into crumbs (a rolling pin works well). Place milk, cheese and
cracker crumbs into three separate small pans. Toss the salt and pepper into the cracker crumbs and
stir the mixture to combine
- Cut each chicken breast into three large pieces then dip each piece of chicken into milk, cheese and crumbs
(in that order) and place in baking dish. Sprinkle parsley over chicken pieces once all are in the pan.
Cover pan with aluminum foil. Bake in preheated oven for 40-45 minutes or until juices run clear
- Remove chicken from oven and let it rest while still covered in foil. While chicken is resting, combine soup,
butter and sour cream into a small pot and warm over medium heat until the mixture can be easily stirred.
- Place chicken onto plates, cover with sauce as desired, and serve
