Chicken Enchiladas

Ingredients
- 2 cups chopped cooked chicken breasts
- 1 green pepper, chopped
- 4 oz (half of an 8oz package) cream cheese, cubed
- 0.5 cup salsa, divided
- 7 flour tortillas (6 inch)
- 0.25 pound (4 oz) prepared cheese product (e.g.,
Velveeta), cut into 0.5 inch cubes
- 1 tbsp milk
Directions:
- Heat oven to 350°F. Mix chicken, peppers, cream cheese
and 0.25 cup salsa in saucepan. Cook on low heat until cream
cheese is melted, stirring occasionally.
- Lightly grease a 13x9 baking dish. Spoon 1/3 cup chicken
mixture down the center of each tortilla. Roll up tortillas.
Place tortillas seam-side-down in baking dish. Set aside.
- Cook cheese product and milk in saucepan on low heat until
cheese is completed melted, stirring frequently. Pour over
enchiladas. Cover the baking dish with aluminum foil.
- Bake 20 minutes or until heated through. Top with remaining
salsa.
