Easy Chicken Marsala

Ingredients
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp dried oregano
- 4 skinless, boneless chicken breast halves, pounded very
thin (approx. 1/4 inch)
- 4 tbsp butter
- 4 tbsp olive oil
- 1 cup sliced mushrooms
- 2-3 cloves fresh garlic, diced
- 1 cup dry Marsala wine (do yourself a favor and buy this from
your local liqour store, the stuff at the grocery store is way,
way too high in sodium)
- 1/2 cup cooking sherry
Directions:
- In a shallow dish or bowl, mix flour salt, pepper and
oregano. Coat chicken pieces in the flour mixture, making sure
to coat all surfaces equally.
- In a large skillet, melt butter in oil over medium heat.
Place chicken in the pan and lightly brown. Turn chicken over
and add mushrooms and garlic. Pour in wine and sherry. Cover
skillet and reduce heat to simmer.
- After a 5 minute simmer, uncover, flip chicken, and recover.
Cook for an additional 5 minutes and serve.
