Grilled Chicken with BBQ Sauce

Ingredients
- 4 skinless, boneless chicken breasts
- Freshly-ground black pepper to taste
- Canola oil
- 6-9 ounces of cook's favorite barbeque sauce
Directions:
- Preheat the grill for medium-high heat for 15 minutes with the
lid closed. While grill is heating, remove chicken from the
refrigerator and pat dry with paper towels. Season the chicken
with pepper.
- When grill is preheated, lightly coat the grill grates with
canola oil using paper towels and tongs. With the grill still
on high, place chicken on grill grates and close lid.
After three minutes, rotate the chicken pieces 45 degrees
(do not flip!). Close the lid and cook for another three
minutes.
- Flip the pieces of chicken and cook for three minutes with
the lid closed. At the three minute mark for the second side,
open the grill and rotate the chicken pieces 45 degrees. Close
the lid once more and cook for one more minutes.
- Reduce heat on grill to low. Using a basting brush, coat the
exposed surface of the chicken with the barbeque sauce. Close the
lid and cook for four minutes. Coat the chicken in barbeque sauce once
more, then flip the pieces of chicken. Coat the newly-exposed side with
barbeque sauce and cook for four more minutes on low with the lid
closed.
- Remove the chicken from the grill and place onto a
clean plate. Cover loosely with aluminum foil and let the
chicken rest for four-five minutes prior to serving.
