Italian Breaded Pork Chops

Ingredients
- 3 eggs, lightly beaten
- 3 tbsp milk
- 1.5 cups Italian seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp dried parsley
- 2 tbsp olive oil
- 4 cloves fresh garlic, peeled and chopped
- 4 boneless pork chops, approximately 1/2 inch thick
Directions:
- Preheat oven to 325°F/165°C (verify with an oven
thermometer).
- In a small bowl, beat the eggs and milk together. In a
separate small bowl, mix bread crumbs, Parmesan cheese and
parsley.
- Heat a large oven-proof skillet over slightly below medium
heat until drops of water sizzle upon contact. Add olive oil and
garlic. Cook garlic until lightly browned, remove and discard
(we're just flavoring the pan at this point).
- Increase heat to medium.
- Dip each pork chop into egg mixture followed by the bread
crumb mixture, coating evenly. Place coated pork chops in the
skillet and brown about 5 minutes on each side.
- Transfer the skillet to the preheated oven and cook for about
25 minutes, or until heated to an internal temperature of
160°F/70°C and juices run clear.
