Lyonnaise Potatoes

Ingredients
- 2 pounds russet (a.k.a. "baking") potatoes
- 2 tbsp olive oil
- 4 medium white onions, thinly sliced
- 2 tbsp fresh garlic, chopped
- 1 stick (or 1/2 cup or 8 tbsp) butter
- Salt to taste
- Coarsely-ground black pepper
- 1 tbsp fresh parsley, finely minced
Directions:
- Preheat oven to 400°F/200°C. Verify with an oven
thermometer.
- Peel potatoes and slice into 1/2 inch cubes. Place potatoes
in a pot and cover with water. Bring to a boil. Boil for two
minutes then drain and set aside.
- Heat a large (at least 12") ovenproof skillet over
medium-high heat. Pour in olive oil and add onions. Saute until
lightly caramelized, about 8-10 minutes. Stir in garlic and saute
until onions are deeply brown in color and garlic is soft.
Transfer mixture to a bowl.
- Place skillet back on stove over low heat. Melt butter then
cover bottom of pan with 1/3 of the potatoes. Season with salt
and pepper. Cover potatoes with 1/2 of the onion mixture. Do
another layer with 1/2 of the remaining potatoes. Season with
salt and pepper. Cover with remainder of onions, and finally the
remainder of the potatoes. Season one last time with salt and
pepper.
- Bake in preheated oven for 30-35 minutes until potatoes are
tender and browned on top. Remove from oven, transfer to a
serving platter, and sprinkle with chopped parsley.
