Lyonnaise Potatoes




  1. Preheat oven to 400°F/200°C. Verify with an oven thermometer.
  2. Peel potatoes and slice into 1/2 inch cubes. Place potatoes in a pot and cover with water. Bring to a boil. Boil for two minutes then drain and set aside.
  3. Heat a large (at least 12") ovenproof skillet over medium-high heat. Pour in olive oil and add onions. Saute until lightly caramelized, about 8-10 minutes. Stir in garlic and saute until onions are deeply brown in color and garlic is soft. Transfer mixture to a bowl.
  4. Place skillet back on stove over low heat. Melt butter then cover bottom of pan with 1/3 of the potatoes. Season with salt and pepper. Cover potatoes with 1/2 of the onion mixture. Do another layer with 1/2 of the remaining potatoes. Season with salt and pepper. Cover with remainder of onions, and finally the remainder of the potatoes. Season one last time with salt and pepper.
  5. Bake in preheated oven for 30-35 minutes until potatoes are tender and browned on top. Remove from oven, transfer to a serving platter, and sprinkle with chopped parsley.
