Mexican Pizza

Ingredients
- 0.5 pound lean ground beef
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 1 16-oz can low-fat refried beans
- 4 10-inch (burrito size) flour or whole-wheat tortillas
- 1/2 cup salsa or taco sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterrey Jack cheese
- 2 green onions, chopped (optional)
- 2 plum tomatoes, diced (optional)
- 1/4 cup jalapeno peppers, finely chopped (optional)
- 1/4 cup sour cream (optional)
Directions:
- Preheat oven to 350°F. Coat two pie plates with nonstick spray.
- Heat beef, onion, and garlic in a skillet over medium heat. Cook until beef is
evenly browned. Drain off grease. Season meat with chili powder, cumin, paprika,
black pepper and salt.
- Lay one tortilla in each pie plate and cover with a layer of refried beans. Put
half of the seasoned beef in each pie plate then cover the meat with the second
tortilla. Bake for 10 minutes.
- Remove the pie plates from the oven and let cool slightly. Spread half of the
salsa over each top tortilla. Cover each pizza with half of the cheeses. Place half
each of the green onions, tomatoes and jalapeno peppers on each pizza.
- Switch the oven to its broil setting. Return pizzas to the oven and broil for
5-10 minutes or until the cheese is melted, watching closely to make sure the cheese
does not burn. Remove the pizzas from the oven and let cool 3-5 minutes before
slicing into four pieces each. Serve immediately alongside sour cream.
