Oven Roasted Red Potatoes

Ingredients
- 1 one-ounce envelope dry onion soup mix
- 2 pounds red potatoes, halved or quartered
- 1/3 cup extra-virgin olive oil
- 1 tbsp seasoning salt
- Fresh-ground black pepper to taste
- 1 clove fresh minced garlic (optional)
- 1 tsp onion powder (optional)
- 1 tbsp oregano (optional)
- 2 tbsp parsley flakes (optional)
Directions:
- Preheat oven to 350°F (verify with oven thermometer)
- Combine soup mix, potatoes, oil, salt, pepper, garlic,
onion powder and oregano in a large plastic bag. Close bag
and shake until potatoes are fully covered. Letting the
ingredients mix in the bag for up to an hour will only
improve the final product.
- Line a baking dish with 1-2 layers of aluminum foil. The
dish must be able to accomodate all the potatoes without
crowding. Spray the top layer of foil with nonstick spray.
Empty bag with the potatoes into the baking dish.
- Cook 60-75 minutes until potatoes are done to the cook's
liking, stirring the potatoes once at the halfway mark.
- Garnish potatoes with parsley and then let potatoes cool
4-5 minutes before serving
