Parmesan-Crusted Garlic Chicken

Ingredients
- 1.5 sticks of butter (should be replaced, at least
partially, with extra-virgin olive oil most of the time)
- 6 cloves fresh garlic, minced
- 1 cup dry bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup thyme
- 1/4 cup basil
- 1/4 cup oregano
- Seasoning salt and freshly-ground black pepper to taste
- 6 skinless, boneless chicken breast halves
- Parsley (optional)
Directions:
- Preheat oven to 350°F/175°C (verify with an
oven thermometer).
- Melt the butter in a small saute pan over medium-low heat. Add
garlic to pan. Increase heat to medium. When the butter starts
to bubble, remove from heat and allow to cool slightly. Pour
melted butter into a 9x13" baking dish.
- Mix breadcrumbs, cheese, thyme, basil, oregano,
seasoning salt and pepper together in a shallow dish or
bowl. Dip the chicken breasts in the butter and then press
into the breadcrumb mix to thoroughly coat the breasts. Once
coated, move chicken to the baking dish, making sure not
to crowd them. If desired, spread remaining bread/cheese
mixture on top of chicken.
- Move baking dish to preheated oven. Bake until the chicken is
golden brown and cooked throughout (no pink remaining),
approximately 40-55 minutes.
- If desired, lightly garnish with parsley before serving.
