Slow Cooker Taco Soup

Ingredients
- 1 pound ground beef
- 1 onion, chopped (optional)
- 2 16-oz cans black beans with liquid
- 1 15-oz can whole kernel corn with liquid
- 1 8-oz can tomato sauce
- 2 cups low-sodium (< 150mg/serving) beef broth
- 2 14.5-oz cans diced tomatoes
- 1 cup uncooked rice (optional)
- 1 4-oz can diced green chile peppers, divided
- 1 1.25-oz package taco seasoning mix, divided
- Black pepper, red pepper, ground cumin to taste
Directions:
- Place a medium skillet over medium heat. Brown the ground
beef. Drain the beef then add the meat to the bowl of a
slow cooker.
- Add onion, beans, corn, tomato sauce, beef broth, diced
tomatoes, rice, half the green chili peppers and half of the
taco seasoning mix into the slow cooker. Mix to blend and cook
on low setting for seven hours.
- At the seven hour mark, add the remaining green chili peppers
and taco seasoning mix, as well as all desired seasonings. Cook
for one more hour and serve with shredded cheese and tortilla
chips.
